Drizzle with Golden Syrup, squeeze on lemon, stack banana with cinnamon, add ice cream, cherries, and sprinkle with icing sugar. Only then, my sweet-toothed friend, will we be in business.
In celebration of a day that puts Valentine's to shame, here are five spots across Herefordshire where Pancake Day comes into its own.
1. Sensory & Rye, Hereford
Proving that Pancake Day should in fact be Pancake Week is new Hereford eaterie Sensory & Rye.
From Monday, Feb 27 to Friday, March 3 (9am - 3pm daily), you can get a delicious discount on gluten-free buckwheat pancakes, served up with fresh fruit and other healthy toppings.

2. The Duck's Nest, Presteigne
On Presteigne High Street, this gorgeous place sits on the Shropshire/Herefordshire and makes the most of that location to source the best local produce.
On February 28 there's an entire pancake menu to devour, featuring everything from beetroot and coconut, to crab and ginger, via heavenly avocado and rum pancake.

3. OK Diner, Leominster
Channel your inner Monica-from-Friends-when-she-worked-in-that-50s-diner because at the OK Diner in Leominster pancake stacks are half price on Shrove Tuesday.
That means a cherry and ice-cream daydream, like the one pictured below, will cost a mere £2.23. Order up.

4. Caffe Eleganza, Ross-on-Wye
Up early-ish? Caffe Eleganza in Ross-on-Wye will be serving its American-style pancakes all week long.
Slather with maple syrup. Or bacon. Or maple syrup and bacon. Either way, wash them down with a cup of the good stuff from James Gourmet Coffee, roasted in Ross.
5. Cellar Door, Hereford
Yes! Another Herefordshire restaurant with a deep understanding of why 24 hours just isn't long enough. Pancake Week at Cellar Door in Hereford starts on Tuesday and runs until Friday, March 3.
Opt for American-style or crepe, eat in or take out. To be honest, as long it's a pancake, you're on the right track.

6. Chez Pascal, Ledbury
We're bending the rules to include Chez Pascal's epic crêpe on our 2017 pancake list. The French brasserie recently moved from Church Lane to 8 New Street (formerly Delilah's) so now is a good a time as any to pay Pascal a visit.
(PS don't tell the pancakes we said this but the homemade patisserie are to die for)
